The selection process is rigorous - focusing only on the family's oldest vines and specifically those yielding less than four bunches per vine, ensuring exceptional concentration and complexity in the final wine.
The harvested grapes rest overnight in temperature-controlled chambers at 5°C, allowing for optimal condition preservation and careful sorting. This cold soak is followed by a precise cold pre-fermentative maceration process that helps extract refined aromatics and deep color, while spontaneous fermentation with native yeasts preserves the vineyard's authentic character.
The wine's maturation journey spans 24 months, beginning with malolactic fermentation and 12 months of aging in French oak barrels, followed by another 12 months in Eastern European oak.
