ELABORATION: This distinctive Malvasia begins its journey with a carefully timed manual harvest in mid-September, when the grapes achieve optimal ripeness while maintaining crucial acidity. Following harvest, the grapes undergo a precise cold maceration process, extracting delicate aromatics and flavor compounds while preserving freshness. Temperature-controlled fermentation ensures the preservation of Malvasia's distinctive varietal characteristics.
The wine then undergoes spontaneous alcoholic fermentation in barrels, allowing natural yeasts to create complexity and express the grape's true character. A three-month aging on fine lees in these same barrels adds texture and depth while developing subtle complexity. This careful process maintains the wine's freshness while building layers of flavor and a refined mouthfeel.
