ELABORATION: This distinguished Crianza begins with a carefully timed manual harvest in mid-October, where grapes are gently collected in small 18-20 kg open boxes to preserve their integrity. Following generations of family wisdom, only the oldest vines yielding less than four bunches per vine are selected, ensuring exceptional concentration and complexity. The harvested grapes rest overnight in temperature-controlled chambers at 5°C, allowing for optimal condition preservation and careful sorting.
The winemaking process combines tradition with precision: cold pre-fermentative maceration helps extract delicate aromatics and color, followed by spontaneous fermentation using native yeasts to express the vineyard's true character. The wine's journey continues through malolactic fermentation in French oak barrels for the first six months, then transitions to Eastern European oak for another six months. This dual-oak approach creates a perfect harmony - French oak providing elegance and structure, while Eastern European oak contributes depth and subtle spice notes.
